How To Make Seafood Creamy Pie

Ingredients:

For the pie crust:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, diced
  • 4-5 tablespoons ice water

For the filling:

  • 1 lb mixed seafood (shrimp, crab meat, scallops, etc.), diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • ½ cup seafood or chicken broth
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions:

  1. Prepare the pie crust:
    • In a mixing bowl, combine the flour and salt. Cut in the cold butter using a pastry blender or fork until the mixture resembles coarse crumbs.
    • Gradually add ice water, 1 tablespoon at a time, tossing with a fork until the dough comes together.
    • Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the oven:
    • Preheat your oven to 375°F (190°C).
  3. Prepare the filling:
    • In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
    • Add the diced seafood to the skillet and cook until just opaque, about 3-4 minutes.
    • Sprinkle the flour over the seafood mixture and stir to combine. Cook for an additional minute.
    • Slowly pour in the heavy cream and seafood or chicken broth, stirring continuously until the mixture thickens.
    • Stir in the grated Parmesan cheese, chopped parsley, lemon juice, salt, and pepper. Remove from heat and set aside.
  4. Assemble the pie:
    • Roll out the chilled pie crust on a floured surface to fit your pie dish.
    • Transfer the rolled-out crust to a pie dish, pressing it gently into the bottom and sides.
    • Pour the seafood filling into the pie crust, spreading it evenly.
  5. Bake the pie:
    • Place the pie in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
  6. Serve:
    • Remove the pie from the oven and let it cool for a few minutes before slicing and serving.
    • Garnish with additional chopped parsley if desired, and enjoy your delicious seafood creamy pie!
