How To Make Spicy Salt and Pepper Squid

Ingredients:

  • 500g squid tubes, cleaned and sliced into rings
  • 1/2 cup cornstarch (cornflour)
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili flakes (adjust to taste)
  • 2 teaspoons Chinese five-spice powder
  • Vegetable oil, for frying
  • 2-3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 red chili, sliced (optional)
  • Spring onions (scallions), chopped (for garnish)
  • Fresh cilantro (coriander), chopped (for garnish)
  • Lime wedges, for serving

Instructions:

  1. Prepare the Squid:
    • Rinse the squid tubes under cold water and pat them dry with paper towels. Slice the squid tubes into rings about 1/2 inch thick.
  2. Coat the Squid:
    • In a large mixing bowl, combine the cornstarch, all-purpose flour, salt, black pepper, chili flakes, and Chinese five-spice powder. Mix well.
    • Toss the squid rings in the flour mixture until they are evenly coated.
  3. Fry the Squid:
    • Heat vegetable oil in a deep fryer or large skillet to 180°C (350°F).
    • Carefully add the coated squid rings to the hot oil in batches, making sure not to overcrowd the pan.
    • Fry the squid rings for 2-3 minutes, or until they are golden brown and crispy. Remove them from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil. Repeat with the remaining squid rings.
  4. Make the Seasoning:
    • In a separate skillet, heat a little vegetable oil over medium heat.
    • Add minced garlic, chopped onion, and sliced red chili (if using) to the skillet. Sauté for 2-3 minutes, or until the onions are softened and the garlic is fragrant.
  5. Season the Squid:
    • Transfer the fried squid rings to a serving dish.
    • Sprinkle the sautéed garlic, onion, and chili mixture over the squid.
    • Garnish with chopped spring onions and fresh cilantro.
  6. Serve:
    • Serve the spicy salt and pepper squid immediately, with lime wedges on the side for squeezing over the squid just before eating.
