How To Make A Tomato and Feta Bruschetta on Sourdough

Ingredients:

  • 4 slices of sourdough bread
  • 2 ripe tomatoes, diced
  • 100g feta cheese, crumbled
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the sourdough slices on a baking sheet and toast them in the preheated oven for about 5-7 minutes, or until they are lightly golden and crispy.
  3. In a mixing bowl, combine the diced tomatoes, crumbled feta cheese, minced garlic, extra virgin olive oil, balsamic vinegar, and chopped basil leaves. Season with salt and pepper to taste.
  4. Once the sourdough slices are toasted, remove them from the oven and let them cool slightly.
  5. Spoon the tomato and feta mixture evenly onto each slice of sourdough.
  6. Optionally, you can drizzle a little more extra virgin olive oil and balsamic vinegar on top for extra flavor.
  7. Serve the bruschetta immediately as a delicious appetizer or snack.
