Ingredients:

  • 2 chicken breasts, boneless and skinless, sliced into thin strips
  • 150g chorizo sausage, sliced
  • 250g angel hair pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 red bell pepper, sliced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the angel hair pasta and cook according to the package instructions until al dente.
    • Drain the pasta, reserving about 1/2 cup of the pasta water, and set aside.
  2. Prepare the Chicken and Chorizo:
    • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
    • Add the sliced chicken breast strips to the skillet and season with salt, pepper, smoked paprika, dried oregano, and dried thyme. Cook until the chicken is cooked through and nicely browned, about 5-6 minutes. Remove the chicken from the skillet and set aside.
    • In the same skillet, add the sliced chorizo sausage and cook until it starts to release its oils and turns slightly crispy, about 3-4 minutes. Remove the chorizo from the skillet and set aside.
  3. Saute the Vegetables:
    • In the same skillet, add the remaining tablespoon of olive oil if needed.
    • Add the minced garlic, chopped onion, and sliced red bell pepper to the skillet. Saute until the vegetables are tender, about 4-5 minutes.
  4. Combine Everything:
    • Return the cooked chicken and chorizo to the skillet with the sauteed vegetables. Mix everything together, allowing the flavors to blend for a couple of minutes.
    • Add the cooked angel hair pasta to the skillet and toss everything together, adding a splash of the reserved pasta water if needed to loosen the sauce and coat the pasta evenly.
  5. Serve:
    • Garnish the chicken, chorizo, and angel hair pasta with freshly chopped parsley.
    • Optionally, serve with grated Parmesan cheese on top for added flavor.
