Instructions:
- Preheat the oven: Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Mix the dry ingredients: In a large mixing bowl, combine the rolled oats, mixed nuts and seeds, and unsweetened shredded coconut.
- Prepare the wet ingredients: In a small saucepan, combine the honey or maple syrup, coconut oil or olive oil, ground turmeric, ground cinnamon, ground ginger, ground cardamom (if using), and a pinch of black pepper. Heat over low heat, stirring occasionally, until the mixture is melted and well combined. Remove from heat and stir in the vanilla extract.
- Combine wet and dry ingredients: Pour the wet ingredients over the dry ingredients in the mixing bowl. Stir until everything is well coated and evenly combined.
- Spread on baking sheet: Spread the granola mixture in an even layer on the prepared baking sheet.
- Bake: Bake in the preheated oven for 25-30 minutes, stirring halfway through, or until the granola is golden brown and crisp.
- Add dried fruit (optional): If using dried fruit, stir it into the granola immediately after removing it from the oven.
- Cool: Allow the granola to cool completely on the baking sheet. It will continue to crisp up as it cools.
- Store: Once completely cooled, transfer the turmeric granola to an airtight container or glass jar for storage. It will keep for up to 2 weeks at room temperature.
